Anyone know the recipe for Leeds traditional dish?

It’s one of those topics that never really crop up in discussions with letting agents in Leeds while looking for places to rent. Have you ever wondered why? You may talk about the weather, transport, shops, pubs, restaurants, what you’re studying, but not cooking.

While living in Liverpool for a year, before moving to Leeds, I loved eating scouse and learned to cook it myself. Does Leeds have a traditional dish worth cooking? I’ve tried to find a recipe but to no avail. Here’s my recipe for Scouse because I don’t like to eat alone:

Cube half a pound of stewing steak and half a pound of lambs breast, and fry with two teaspoons of vegetable oil until lightly brown. Then add a touch of Worcester Sauce, but not too much. Then add one large chopped onion, one pound of chopped carrots, and one pound of diced potatoes. Place cold water in the pan until it is half full before adding two crushed OXO cubes. Put in a pinch of salt and pepper to taste and stir while it simmers. After two hours of simmering, add the rest of the four pounds of chopped potatoes. Let this simmer for another two hours, then serve with crusty bread, and any or all of the following sides: beetroot, pickled onions, and red cabbage.
